This Weeks Breakfasts
As you get to know me you’ll come to realize that I swear by planning. I plan our meals every week and then go through the store flyers and coupon inserts to insure I get the best deals for my family. This month we are a little tighter on cash, I get paid hourly and when the school district closes for a snow day I don’t get paid. This really hurts our monthly budget, so this month I am focusing our meals on what I already have in the house.
When I plan breakfast for the week I think about what both my husband and myself like to eat. Our breakfasts can range from any of these options; Cereal, Oatmeal, pancakes, waffles, muffins, egg sandwiches and omelets. I have recently been trying to cut processed food from my family’s plates, I am not perfect at this yet, but we are moving toward a more clean eating lifestyle. This week I have planned for the following options; Oatmeal, Egg Sandwiches, and pancakes. I make all of these options on Sunday and freeze them so that we have options for the week with the exception of oatmeal.
Cinnamon Brown Sugar Oatmeal packets
What you’ll need:
Brown Sugar, cinnamon, rolled oats, snack size ziplock bags
What you do:
1. Put 1/2 cup of rolled oats in ten ziplock bags
2. Put 1 tbsp of brown sugar in each bag
3. Put 1tsp cinnamon in each bag
4. Close the bags and store in your cabinet or pantry
5. When you’re ready to eat the oatmeal pour it into a microwave safe bowl add enough water to cover the oatmeal and cook for one minute.
Oatmeal is much cheaper when you make it yourself and add the things you prefer rather than buying those pre made pouches. Also, the pre made pouches only give you about a 1/4 cup of oatmeal, when you make it yourself you can make the 1/2 cup serving and also eliminate many of the unnatural ingredients that are in processed oatmeal.
Pancakes
This one is simple I have a my fav go to recipe for making pancakes from scratch which I found on the internet years ago. This totally saves money because you aren’t buying those prepackaged frozen pancakes. Plus, you are eliminating yet another processed food from your diet.
Egg Sandwiches
Now this one I have not been able to eliminate all the processed food from, but when I do you’ll be the first to know.
What you’ll need:
6 eggs
6 English Muffins
Salt and pepper to taste
Bacon
Cheese of Choice (We like american)
What you do
1. Spray a muffin tin with cooking spray.
2. Crack one egg in to each muffin tin
3. add salt and pepper to each egg
4. Bake in oven 350 degrees for 15-20 minutes depending on how you like your egg
5. While the eggs cook make your bacon, I make one slice for each egg
6. Cut the english muffins in half
7. Place on slice or cheese and one slice of bacon on each english muffin
8. When the eggs are finished remove form the muffin tines and place one egg on each english muffing.
9. Wrap in foil
10. Freeze.
11. When ready to eat place in microwave for 30 second. Flip and microwave 30 more seconds.
